Hmm... something must be wrong with my game. Is it the same sounds as the original? I can't find any of my settings that disable it.

Meh, Blizzard's soundwork hasn't been all that impressive since the original SC. Warcraft 3 had very lame ambient tracks for the races and WoW was pretty bad for awhile with a few good themes here and there.
The soundtracks are usually too ambient and forgettable.
The actual unit sounds themselves are okay. The VA is pretty bad and I'm hoping they're placeholders for some of them.
The attack sounds are okay though.

I don't know; compare the sound and the music from Diablo 1 to Diablo 2; Diablo 1 had far better and far creepier, atmospheric music. That shit was downright CREEPY, and it made what Diablo is today.
Diablo 2 was just the "loot" game.

In terms of sound effects, I gotta say that I tend to like most of the sounds. They probably aimed for some realism, and I think that's okay. The only one that I recall to be a real disappointment is the Hydralisk's attack sound. It's way too hard to hear. Giving it a good "wet spit" sound would probably fix that. My absolute favorite sound effect is the Void Ray's attack. There's just nothing quite like that deep, electric hum that makes my subs shake.

Didn't read the whole thread but at the OP;
I am quite positive the Dark Templar still retains a similar sound to the original. The Zealots also received a new more impact-ish sound. They no longer wiff at the enemies.

I also agree with the OP.
I think the great thing about SC1 is that they didn't always go for the obvious choices and that made some of the units really memorable. For instance, the overlord. You would expect it to have a deep authoritative voice, but instead it sounded more like a retarded horse. That was awesome! Also, the siege-mode of siege tanks and their attack sounded awesome. As well as the earlier mentioned hydraiisk and DT attack.
I think for SC2 Blizz has played it too safe. It is all too polished. They should take more risks into making sounds a bit weirder. I think they did succeed in the Sentry, it sounds really cool. A lot of the sounds are kinda ok, but hydralisk attack is just lame. Also, the stalker voice acting is horrible.
