Are Zerg edible?

Cannibalism. When there's nothing else to feed on the Swarm begins to feed on itself, much like the body of a person who's been deprived of food for too long. Which begs the question though, was there any evidence that the Zerg completely destroy all the species that they assimilate, or only those they perceive as a threat to their superiority? Are there still original Dune Runners and Slothien running around? Are the Zerg capable of existing in an ecosystem or do they completely destroy each and every one?

This makes for a bad life decision. If the Zerg are forced to resort to that, then they aren't parasites so much as a virus.

The only reference we have is the manual, which states the broods are tasked with either assimilating an alien species, or wiping it out if it cannot be. That said, there's nothing pointing us one way or the other on the subject.

I don't know. From the looks of it, they ruin everything. I suppose the Overmind planned for the zerg to rest only when it found the means to perfection -- the Protoss, so maybe it's never come up before for them.

Funny how you mentioned that, because that's how it was meant to be. Through one (natural) means or another, the intent of the Xel'Naga was for the Protoss and Zerg races to become one and become the next race of Xel'Naga. I believe it would be upon this evolution to perfection in which the ravenous nature of the Zerg would begin working with nature rather than consuming it all.

Which then begs the question... I wonder what the Xel'Naga are going to eat?

Zerg feed on the creeps. The creep is more or less a swamp of nutrients, produced from most zerg buildings (which are essentially giant organs), which produce creep/extend it. Ever wondering why zerg need minerals and gas? Probably because the zerg have a evolved form of bacteria that is able to metabolize metals (which exist irl), and waste products are secreted as creep. Most substances needed for organic life can by synthesized from most metals. In addition, you know those tube worms that live on hot gas trenches in our oceans? The zerg probably have those in the form of their gas refineries, which are essentially giant versions of those worms. Raw minerals are converted into nutrients, which is dispersed as creep. So, to an extent, the zerg could probably live on a world in great numbers for a long time until the planet literally drys up. That could take thousands of years.

Zerg probably are edible, if they are cooked sufficiently. Once you cook something to the required degrees, everything dies. Cells aren't really cells anymore just a mess of protein. The hyper evolutionary virus would probably die along with it. As long as your not eating any of their bioweaponary organs, you should be fine.
