Yes they will beat Stalkers if you don't micro at all. First of all, Stalkers can focus attack Roaches due to superior Range, and Blink is better than Burrow for micro, also Stalkers can hit and run or even kite Roaches due to 2x their range and them being a lot faster than Roaches. The only time I saw Roaches beating Stalkers was when they were really badly outnumbered. Problem is no one even tried a mass Stalkers vs. Roaches, whenever Protoss see Roaches he rush for Immortals.
Um... I do mass stalkers against mass roach sometimes (It requires a 4 gate pure build to do)
And yes, It gets hairy...
If Protoss doesn't let you control the pace against Zerg, play as Terran against Zerg.
