I usually leave blacks and whites for last, too. I get a little irritated sometimes when some artists say to NEVER use pure black, though. Black can add such presence and drama to a piece, or any number of other things. The same goes for white.
I thinkk this depends on what medium you're using and what you want to achieve (it'll be a bit difficult to avoid black in a graphic pen and ink drawing ;) ). The bit about not using pure, flat black I believe mostly applies to atmospheric darkness in watercolours.
Not using pure white or pure black I think has to do with the fact that nothing in nature is purely black or purely white. Even what we consider to be a black glossy object such as the plastic casing of a computer monitor still reflects light in a way that makes it very, very dark grey. Then you have reflections on top of that. Even a white object might not be well lit in any given situation and will have a grey gradient and variations in color. Saving pure white and black for a small amount of extra depth is indeed what makes it come alive. Of course, all rules in art are meant to be broken :)
So it depends on the look you are trying to achieve I suppose. I usually work from dark to light, same as Visions of Khas, saving my blacks and whites for last. First thing I usually do is get rid of all the white on the page so I can see my colors since white will start to mess with your eyes and keep distort your perception of the surrounding colors.
Anywho.. do we have a part of this forum for talking about art techniques? I suppose a thread for that sort of thing could be in the off topic section. Just wondering because I love to get together and talk art with peeps :D
